Ingredients:
2 or more chicken breast 1 handful fresh chopped spinach 1 Solid Feta Cheese 4-6 garlic cloves Onion powder Salt Ground Pepper 1 tsp Extra Virgin Olive Oil (for browning garlic) Smoked paprika 1/8 tsp dried thyme 1/8 tsp dried rosemary
How To Cook
On a medium low heat the oil in a pan. Add diced garlic dried thyme & rosemary. Sauté until garlic starts to get golden brown. Once garlic turns golden brown add spinach. Season with onion powder and season lightly with salt & pepper. Feta cheese is salty so don’t over salt spinach. Toss altogether and set aside when done. Let mixture cool.
Cut a pocket into the fat part of chicken. Season chicken with salt, pepper, dash of onion powder, dried thyme & smoked paprika and a dash of oil. Mix all over chicken inside & out.
Once pocket is open stuff with spinach and add feta cheese. Add a portion of feta cheese about the size of your thumb or 1 tablespoon inside the pocket. Use the remainder of pocket space to stuff in the fresh chopped spinach.
Now seal the pocket with toothpicks.
Heat a pan on medium high and add a dash of olive oil to pan. Place chicken top side down and let sauté for 5 min or until a golden color on top. Then flip it over and do the same for the other side. Then lower the heat of the pan to slow cook, flipping the chicken breast over every 2 minutes until cooked all the way through. You should be able to peak inside the pocket and see no pink colored meat, but all white.
